Heat Resistant Buttercream

In humid and hot weather is important to improve the buttercream adding certain amount of High Ratio Shortening.

In Katy Cake Supplies you can find several brands of Hi-ratio Shortening.

BUTTERCREAM ICING


Ingredients:

8 oz. vegetable icing shortening (Hi-Ratio) at room temperature

16 oz. butter at room temperature

4 tsp vanilla or any clear flavor

2 lb 10 oz. (42 oz) Sifted confectioners Sugar

2 tbsp of milk or water


Preparation:

Beat butter at medium speed until soft and pale, add the shortening and beat 20 seconds, add vanilla and milk or water. Beat at medium speed for 10 to 20 seconds.

Slowly add the sifted powder sugar and beat at medium speed for 20 to 30 seconds.

Scrape the sides and bottom of your bowl and beat for another 20 seconds.

Keep the buttercream in the refrigerator in a plastic container.
